When you are trying to limit yourself to 1400 calories a day, a breakfast that is delicious and filling is quite a hard task. During the week we have quick and easy eggs, but come the weekend I like to try and create a more indulgent feeling breaky/brunch. It isn’t until you try this that you realise all of those standard brunch recipes, are pretty high calorie, and as we aren’t prepared to eat lettuce for the rest of the day, some further research was required. Then I stumbled upon ‘egg in a bagel’.

Looks good right? And around 260 calories by my estimation. All you need is half a bagel, an egg, some sort of brunchy meat (I used ham) and some cheese. My personal opinion is the cheese isn’t necessary, but my wife to be would strongly disagree. Although she thinks cheese is essential on 99% of meals. Dip the crunchy ‘hole’ cut to make the well for the egg into the runny yolk and you have a delicious brunch that leaves some calories for the rest of your day. Glass of wine anyone?
