Homemade Tacos

A while ago, I finally got around to using a Christmas present that, I’ll be honest, I wasn’t sure I would actually use. I’ll explain. It is a tortilla press and as a lover of Mexican food and cooking, it’s a great gift, but when they are so easy to buy from the shops, is it something I could make time for? I am a believer that some things, you should just buy ready-made. Pastry for example. And I used to think tortillas. Boy was I wrong.
We were hosting a dinner party for 2 friends where Mexican is usually on the menu, so I thought this was the time. To make corn tortillas you have to buy the ground corn called Masa Harina. I thought this would be a nightmare but to my delight, they stock it in Waitrose. The mix is so easy, no kneading, no proving, just hot water and the Masa. Let is rest and then the fun begins. I calculated that I had to make 16, 4 each to be safe. Thinking this would take ages, I started at around 12, glass of wine in hand. I was done by 1pm! Ill admit, I had two pans on the go to cook them, but each only takes 3/4 mins, so before you know it you have a stack of toasty, corny, soft breads ready for any plethora of delightful fillings.
