So post lockdown I have been faced with a new challenge. Pips is back to work, but due to Covid restrictions, she needs cold lunches. This is not my usual go to or forte and without sounding too big headed, I have a reputation to uphold. Pips is known in the office for having banging lunches. How will I continue this calibre?!

Then it hit me, the godfather of sandwiches, a Reuben. Typically a hot sandwich, it does translate very well to cold, and with a few added tricks, I also kept it down to 400 calories so we don’t blow the daily allowance on lunch. Luckily we are still using our butcher who do great bulk packs, so my freezer is generally full of chicken and lean rump steaks, and that is the secret to this. Beautifully seared in salt and loads of pepper, sliced wafer thing and then put back into its resting juices until making the sandwich. Tender, moist and darn right delicious.
The rest of the sandwich is simple enough. Medium brown bread saves about 50 calories and it’s all about the filling anyway, a generous helping of burger sauce (we always have M&S in our cupboard, but you can also just mix some ketchup, mayo and gherkins and be pretty much there), about 50g of the juicy steak, a handful of sauerkraut and a single slice of Emmental. Done. Don’t get me wrong, if you then toasted this bad boy, it would be next level, but for anyone looking to jazz up the humble sarnie, look no further!
